The term "gluten" means glue, and it does what it literally mean. It is the sticky “gluey” substance that gives your wheat and similar products their chewy texture. It gives that elasticity to dough, helps it rise and keep its shape. Gluten is also used in cosmetics, hair products, and other dermatological preparations.
Dr. Vikki Petersen, who is a Doctor of Chiropractic, Certified Clinical Nutritionist, public speaker and an author of the internationally published best-selling book, "The Gluten Effect," says that it is one of her missions to dispel the myth that if you don't have celiac disease, you have nothing to worry about.
Historically, men survived on a diet consisting of nothing but wild food and meat, along with some fruits, nuts, vegetables and seeds. It was just during the New Stone age that our ancestors started to cultivate wheat even though the human body wasn’t adapted to digest gluten and break it down into individual amino acids. Nowadays, about 30% - 40% of the population in the U.S. suffers from gluten sensitivity experiencing abdominal discomfort or pain, diarrhea, muscular disturbances and bone or joint pain.

Know Which Foods Contain Gluten
The gluten-free community have already seen the change in the availability of the gluten-free foods. What was once only found in specialty stores and unknown to many has now become a trend.
Wheat, barley or rye products are the major sources of gluten. Most of us, however, are unaware that some of those innocent-looking grocery items in fact still has gluten, but on a different name to make it more less obvious. Thus, it is very important to read food labels and know which ingredients has gluten and which has none, or better yet, just find the "gluten-free" label!
Product ingredients change frequently. Take time and carefully check the label before putting them in your cart. Another example is that oats do not naturally contain gluten, but they are often contaminated with wheat or other grains. Yes, sadly, some products are manufactured in shared facilities or on equipment shared with wheat products.
